What to do with a flush of crabapples? In the past I have been happy to donate our small crabapple crop to the rosellas - enjoying watching their delicate balancing act and contented nibbling. This year the trees' abundance seems to have outdone even the most voracious rosella appetite! I'm on the hunt for preserving methods and as I'm a keen advocate of traditional food preparation, my first thought is to ferment these hanging jewels.
